

Let’s talk about squash baby! 🎶 I’m holding a Summer Squash (all yellow) and a Delicata Squash. Summer squash is more similar to zucchini whereas delicata is more similar to butternut. Delicata is also considered a winter squash. While these squash are quite different they each are full of nutrients. They are a good source of fiber, protein, vitamins & minerals. Squash is also packed full of carotenoids. Carotenoids are phytonutrients - which is a fancy word for a compound a plant makes to protect itself, that’s good for us. Antioxidants fall into this category! In winter squash varieties there are carotenoids that can be converted into vitamin A. For summer squashed I like to sauté them as a side or in stir fry. For winter squash I usually roast it in the oven. It’s my favorite with pasta 😋
